Mexican Style Plant Based Bowl Recipe


Rice: 
1/2 Cup Brown Rice (measured dry) 
1 Cup Water 1 tsp Better than Bouillon Vegetable Base 
1/2 tsp garlic powder 

1 Tbsp lime juice added after cooking (makes 2-3 servings)  

Cooked Beans or 
 Quinoa Taco "Meat": 
1/3 Cup Quinoa (measured dry) 
2/3 Cup water 
1 Tbsp taco seasoning 

 2-4 Tbsp salsa added after cooking (makes 2 servings) 

Corn, onion, and bell pepper cooked in 1 Tbsp canola oil 
Tomatoes and avocado raw, chopped. 

Add all ingredients together into bowl.

Enjoy.
